Emulsina (Increases the volume, and the emulsion of fruit icecream) - paste preparation

To be dosed with tablespoons.  For cold use with fruit base mixture.  It increases the volume and creates a fine structure of crystals that make the icecream smooth and creamy.

Gelato Recipe: a tablespoon of emulsine for 3 liters fruit base.
